Convection Oven Installation

Bob joins electrician Larry Dana in the kitchen of the Quechee farmhouse as he installs the Kenmore Elite 30" self-cleaning convection oven. The oven requires 220 high-voltage current as it will be delivering a high degree of heat. Larry recommends hiring a licensed electrician for this kind of installation. Bob underscores that, as a rule of thumb, you should always connect your ground wires first. Next Larry connects the neutral wire saving the potentially hot for last. Rather than putting the junction box back in the wall after connecting the wires, Larry leaves it floating behind the unit to facilitate servicing later on if it becomes necessary. In addition to the aesthetics, another advantage of the flush controls on these newly designed appliances is that without the clutter of toggle switches and buttons, they are a lot easier to read and to keep clean.

" We're gonna get started today with the oven, and Larry, you're just basically getting started. Now what kind of current do you have to provide to a big oven like this?"

" This is a high voltage current."

" 220?"

" 220 volt. Yes."

" Now, just what is 220?"

" 220 is a high voltage. It's 2 110's put together."

" That's pretty simple."

" Right."

" And what you're doing essentially is delivering a lot more power to a unit that needs it because it's providing a high degree of heat."

" Right. That's correct."

" Now, is this a do-it-yourself project? If you've got folks that are doing their own installations at home, do you recommend that they attempt this?"

" No, I don't. It's life threatening. You ought to get a guy who's a professional to do it for you."

" That's correct."

" Wanna take us through the steps here? I mean, what kind of a cord is it that's coming out of the wall?"

" We're on an 83 cord from the power panel in the basement"

" Uh huh."

" And put it into this splice box. And this 1 here is the line coming from the oven itself."

" So you get the cable in there. You tighten it up."

" Tighten it up."

" Which wires do you hook up first?"

" I hook the ground wire up 1st to the junction box----"

" Uh huh."

" to this green ground screw down here on the bottom."

" There's kind of a rule of thumb that you always connect your grounds 1st."

" That's correct. I always do my ground 1st."

" It's an added safety feature."

" And then my next 1 I do is a neutral wire."

" And those would be the white wires. So you save the potentially hot for last."

" Yes."

" Okay. Now, in an oven connection like this, a junction box doesn't necessarily go back into the wall, right? It just stays loose back there?"

" Yeah. It's gonna be flowing solid. The unit can be set out on the floor for maintenance."

" If you need servicing, yeah. And now the more tedious part has to do with the trim etcetera. But this is 1 of the new Kenmore elite ovens. It's a self-cleaning convection oven, and that's a great feature, the convection. You see the fan back there, but that really allows you to cook a lot of different things in the oven at once, and it really distributes the heat all around. And I think what a lot of people like about these new designs is the fact that all the controls are flushed. Because of electronics, you really don't have any more knobs and toggle switches or buttons or whatever. This can be easily cleaned and easily read."

Completed Kitchen Tour
Completed Kitchen Tour

Bob tours the completed kitchen at his Cambridge home. The Sub Zero refrigerators have been customized in one area using the same bead board design as the kitchen walls and in the breakfast area refrigerator drawers to match the wood cabinets. Two Jenn-Aire digital convection ovens and a cook top from Brown Stove Works allow for a truly impressive cooking operation. Most of the kitchen is commercial grade with stainless steel. The exhaust vent stove backsplash and the countertops flanking the stove were made by a restaurant supply, stainless steel fabricator in the Boston Area. The counters were fabricated on site from soapstone quarried in Brazil. Soap Stone if cut upon can dull a blade so hard rock Maple butcher blocks from Eastern Butcher Block are laid on top for food preparation.

Oven Hood and Shelving Installation
Oven Hood and Shelving Installation

Bob and Ryley install an resturaunt quality Braun oven hood vent to compensate for the lack of exhaust outside the building. The fan is equipped with two charcoal filters on either side of the exhaust fan in addition to the grease filters. The range will be vented inside the room, and the hood is the best possible solution. Also installed are Metrowire shelves.

The kitchen is set for company, but the counters are clean and uncluttered. Appliances in white complement the adjacent living space in this open-plan apartment. The Whirlpool double-door refridgerator in white, with lots of storage and features, blends with the oven and cooktop, also from Whirlpool, and the Energy Star dishwasher with high-end features like wine-glass racks and special wash cycles. Bob challenged the crew to outfit the kitchen completely by shopping online from Sears.com. Juicers, pots, pans, blender, combination microwave-convection oven, coffee grinder and brewer, were all selected, delivered, and tucked away in this getaway kitchen designed for easy entertaining.
